Hey guys. I’m back… again. Let me simply warn you that the following recipe is HEALTHY, and I would like to thank Epicurious.com for this recipe. Very delicious!
Ingredients:
1 cup old-fashioned rolled oats
1 cup buttermilk
1 large egg, beaten lightly
1/2 cup firmly packed light brown sugar
1 stick (1/2 cup) unsalted butter, melted and cooled
1 cup all-purpose flour
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 cup dried currants
Cool fact: This recipe originates from Louisiana in the 1940s.
Preparation:
1. In a large bowl, combine oats and buttermilk and let stand 1 hour.
2. Preheat oven to 400°F. and butter twelve 1/2-cup muffin tins.
3. Add egg, sugar and butter to oat mixture, stirring until just combined.
4. Into another large bowl, sift together flour, salt, baking powder, and baking soda and add to oat mixture, stirring until just combined. Fold in currants.
5. Divide batter evenly among prepared muffin tins. Bake muffins in middle of oven until golden and a tester comes out clean, about 20 minutes.

These muffins are extremely delicious, but as you have read, this recipe takes about and hour and a half. Thank goodness I did not have to go to another get-together or a party, I would have had zero free-time! And, I can’t stress this enough, these were very good muffins.

Hey guys! I don’t think I’ve been gone for a long time but… anyways let’s get BAKING!
500ml (2 cups) All purpose flour
75ml (1/3 cups) Splenda/artificial sugar
20ml (4 tsp) Baking powder
5ml (1 tsp) Salt
2 Eggs
375ml (1 1/2 cups) 2% milk
125ml (1/2 cup) Cooked mashed potatoes
175ml (3/4 cup) Grated ‘light’ Cheddar cheese
75ml (1/3 cup) Margarine, melted
Got all that? Great! Let’s get started;
1. Preheat your oven to 200 degrees Clelsius (400 degrees Fahrenheit). Line muffin tins with paper cups (or spray with vegetable oil spray).
2. In a large mixing bowl, combine the flour, Splenda (or your artificial sugar), baking powder and salt.
3. In a medium-sized, mixing bowl, beat eggs well with an electric mixer or a wooden spoon.
4. Stir in the milk, mashed potatoes, grated cheese, and melted margarine. Mix well!
5. Add the egg mixture to the flour mixture and stir just until mixed (20 strokes).
6. Spoon the batter into the paper lined muffin tins and bake at 200 degrees Celsius (400 degrees Fahrenheit) for 25 minutes, or until firm and lightlty browned.

When I first read the title of this recipe I thought it sounded just plain old disgusting. But trust me, it tastes really good! I made these during the week-end and they were are gone the next morning. Then I couldn’t make any more because I had no more eggs or potatoes. But anyways, potato and cheese muffins are really delicious!

Hey guys. I’ve been gone for a while now. Sorry ‘bout that. Been busy… BAKING!!!
Today I’m going to write down my recipe of peanut butter cookies. So, what you need is:
75ml (1/3 cup) Margarine
125ml (1/2 cup) Brown sugar
1 Egg
150ml (2/3 cup) ’Light’ peanut butter
2ml (1/2 tsp) Salt
2ml (1/2 tsp) Baking Soda
250ml (1 cup) All purpose flour
125ml (1/2 cup) Splenda (artificial sugar)
2ml (1/2 tsp) Vanilla
Sounds delish! Now let’s keep going,

New Year’s Eve Party!
I baked these cookies for a New Year’s Eve Party. And guess what? They were all gone within 10 minutes, there were only 11 people including me! Oh, and I had to take extra precautions not to mess this batch up somehow… Anyways, I will be writing my next post in about a week or two,

It’s hard pick a type of dish to make. There are just way, way to many. Yet my blog is only about baking. A good part, it narrows down my search. It’s also hard to find a recipe book because every single time I ask for a baking book, the cashier or secretary brings me to a large divided section of recipes of cookies, cakes, pastries etc. I ask them if they have a baking book not only about desserts but other types of baking, they reply with the longest “No” you have ever heard, followed by a “We don’t sell any of those.”. Why do I ask for baking books instead of cook books? Because I don’t really want to buy a cookbook with most of the recipes about frying, boiling or whatever. I’m not naming stores, but I’ve looked in a few. Any how, I will find a book sooner or later.

Hey guys. Today, I’m going to be testing my own;
BANANA BREAD!
This is what you will need (A very simple bake.):
2 Eggs
50ml (1/4 cup) Brown sugar
50ml (1/4 cup) Vegetable oil
250ml (1 cup) Mashed ripe bananas
50ml (1/4 cup) Unsweetened applesauce
500ml (2 cups) All purpose flour
125ml (1/2 cup) Splenda (Zero calorie sweetener.)
5ml (1 tsp) Baking powder
5ml (1 tsp) Baking soda
2ml (1/2 tsp) Salt
125ml (1/2 cup) Chopped walnuts
A few sprays Vegetable oil spray
1.5L Loaf pan
Have all those ingredients? Great! Let’s start the hard stuff:
Mmmm! Sounds delicious! Now (by using my now known “catch phrase”) I’m going to go check out my BANANA BREAD!

Turned out alright… I guess…
You would not guess what mistake I did. If you scroll up a bit, to the amount of mashed ripe bananas, I wrote to mash 250ml (1 cup) of bananas. And, silly me, I put 500ml (2 cups) of mashed bananas. My bread tasted, extremely fruity.I can barely taste the brown sugar (If you’re wondering, I put the right amount of that ingredient) and the apple sauce was bland, at least I got a bit more potassium, right? . All in all, it was quite satisfying.
